Je viens d'installer Xampp (je suis sous Linux 14.04), et, à peine arrivé sur PHPMyAdmin, j'ai l'erreur suivante :

 Connexion au serveur MySQL non permise

 J'ai donc essayé de me connecter avec "root" et "" (mot de passe vide), mais rien à faire...

Là je vois vraiment pas...

je ne vois rien de différence avec le fichier config.inc.php que j'ai, et ça marche chez moi. je pense que le souci ne vient pas de là.

a tu démarré xampp? (peut être une question idiote, mais fallait la poser )

Oui, Xampp etait ON.

Il suffisait d'entrer la commande suivante :

/opt/lampp/bin/mysqladmin --user=root password "newpassword"

Problème résolu !
